THE RECIPES OF FALL: PUMPKIN PIE BARS


It’s not fall without pumpkin! Today’s recipe packs the irresistible flavor of pumpkin pie into sweet dessert bars. Pull out the cake pan and get ready for some homemade deliciousness! Pumpkin Pie Bars By Valerie Steiner (from Lehman’s Sapphire Cookbook Collection) Ingredients CRUST:

  • 1 C. flour

  • 1/2 C. quick oats

  • 1/2 C. brown sugar

  • 1/2 C. butter

FILLING:

  • 2 C. pumpkin

  • 3/4 C. buttermilk

  • 2 eggs

  • 3/4 C. sugar

  • Pinch of salt

  • 1 tsp. cinnamon

  • 1/2 tsp. ginger

  • 1/4 tsp. cloves

TOPPING:

  • 1/2 C. brown sugar

  • 2 T. butter

  • 1/2 C. chopped nuts

Combine crust ingredients in a mixing bowl and mix until crumbly. Press into a greased 9 x 13″ pan. Bake at 350°F for 15 minutes. Combine filling ingredients and beat well. Pour over baked crust and bake at 350°F for 20 minutes. Combine the next 3 ingredients and sprinkle over pumpkin bars and return to oven. Bake at 350°F for 20 minutes or until set. Serve at room temperature.
